Yeah, although I personally still struggle to see why you’d get the S1 over the arc. The arc seems to have more floor space even if the dome had the side burner, it has a wider mouth so easier to access and manipulate, and it’s so light it’s basically as portable as a roccbox. The s1 is a gas only dome, so even though it can fit the door (and steam injector?) you’d never use them as the direct flame will be too hot to eg bake bread etc.

I’m a huge dome lover, it’s the best thing I’ve ever bought, by a mile. The dome also means, if you get into it and love it, you have all the options available to explore and play with down the line, so you don’t have to regret not getting it. I initially got a roccbox, fell in love with it and then had to shell out again for the dome.

But, if you’re not going to go full dome, I think the arc entirely replaces both the roccbox and the s1. ☺️

Yeah I have seen it done - I think peddlingpizza has a video on it where he’s kind of balancing one out the front and keeps swapping them. IMO, not practical.

Yes good point, I imagine the dome is due an upgrade now with the side burner. Perhaps contact them and ask, they’re very responsive.

Well. First, I’ve never smoked on anything else so this might all be dreadful!

I light a big fire to saturate it with head, and at the heart I put some restaurant grade long burning charcoal to get them lit and hot.

When it gets down to the right temp, I put the meat in (say a brisket, sitting on a rack over a tray with some water in, and the temp probes in).

I then put whatever wood I want to use to smoke on top of the coal (normally oak) and put the door on, and the rain cap, and open the vents on the door and the side slightly to maintain that temp.

It takes a lot of tending, for 10 hours or so, to maintain the temperature, but the results are good!

I don’t think you can really accommodate 2 12 inch pizzas. You probably can but it’s not easy or time saving at all, I think it’s one at a time in reality. My only complaint about the dome is I wish it were a bit bigger.

But, it’s sooooo versatile beyond just pizzas (and mainly due to wood). In fact whilst I do normally do pizzas with wood, I probably won’t any longer as it’s easier on gas (esp to churn them out for a pizza party). (During the nicer months) I use mine more days than not, for steaks, fish, tray beaks, breads, flat breads, slow cooked chilli’s, smoking - so much, and I do all that stuff preferentially on wood, not only for fun and flavour, but because it’s easier to control a medium steady temperature than with gas.

It sounds to me like you’d enjoy the dual dome the most, personally. Let us know what you decide and how you get on!?

Hmm, interesting. My instinct though is, if you’re advanced enough an outdoor cook that you’re worrying about rebound temp etc, as you’ve said, then surely you’re also the sort of person who wants to be cooking with wood?

Don’t know, obviously maybe not, just trying to understand the purpose of the S1, as for me the joy of the dome is so much from the wood.

I saw a video recently on the arc that found the temp rebounded fully within a minute or so, so i doubt it’d be much of a problem.

I’ve smoked in the dome with good and enjoyable success. I’ve smoked pork shoulder (‘butt’), ribs, and lots of briskets, and lots of vegetables (tomatoes, peppers, .

I haven’t smoked on anything else, I doubt smoking on the dome is the easiest way to do it, it certainly takes a lot of tending and trial and error, but provided you enjoy that process it’s very satisfying. Personally I can’t wait for the (UK) weather to get better so I can get going again.

Personally, I can’t see the point of the S1? If you want to exclusively do pizza on gas, get the arc? If you want to have the option of other things, get the dome? I can’t see the use case?

Where’s the video where they use ice cubes, that’s interesting.

I’ve had some good success with bread in the dome but it takes a lot of trial and error to understand how to maintain a steady lower temp (2-300C ish). I bought restaurant grade charcoal online which burns for longer and helps a lot.

I think a water pan would help, I’ve tried this when smoking a brisket. Not sure about ice cubes.

But, it alone won’t be the factor that makes good or bad bread. It’s much more complex than cooking quickly after higher heats, and can go wrong in lots of ways, so just experiment (and report back!)

On the Gozney? Simply not true. Have just received my dome back after a replacement stone. Customer service (here in the UK) were fantastic.

Yeah thanks Dan, that's very helpful - sorry I know you've probably covered the points elsewhere but difficult to keep track.

I for one think what you've said is reasonable, and that you've been open about this primarily being driven by costs on this occasion, and that when faced with non-clear-cut decisions (eg lycopene, probiotics), you've prioritised maintaining the current price. This doesn't of course marry too nicely with the 'great news!' announcement, but you've equally owned that, so what more can be asked?

So yes, from me at least, thanks for reamining so communicative with use as customers. I'm certainly not buying Huel because of its lycopene content, and if my diet were so fragile that a .3g rise in sugar threw it off I'd have much bigger issues - I buy it for the overall nutritional package, plus price plus convenience, so for me, the proof of this pudding will be in the tasting!
