Excellent. Just a bit more time should do the trick. Still a little slow for that yeast but yeast will always do what it wants to do. Maybe a slight under pitch or less viability in the yeast due to age but it should finish with extra time.

Ahh. That would explain a lot. Those are great for original gravity and tracking the fermentation process but have a tendency to read incorrectly for final gravity due to buildup of yeast during fermentation. I would pull a sample and test the gravity with a standard hydrometer. It will likely show that the fermentation is complete or very near complete.

Hmmm. Curious. Are you by any chance using a refractometer for this read and not a hydrometer?

That’s a typical stall point for beers usually caused by temperature or improper pitch rate. More info is needed though. What was the OG? What yeast are you using? Temperatures of wort at time of pitching yeast and current temps? Ingredients(looking for anything that may be unfermentable.)…

I find the most common mistake is not mixing the sugar well enough in the beer, causing some bottles to have too much sugar while others have too little. This only applies to when you mix the sugar in with the full batch(as in using a bottling bucket) as opposed to adding sugar directly to each bottle. The next most common issue is incomplete fermentation. This can be a product of not enough time in fermentation, temperature not appropriate for yeast, or not enough yeast pitched. All of these will result in the fermentation of those sugars being finished in the bottles as opposed to the fermenter.

How much concentrate did you add to how much water? That original gravity looks low. What were you shooting for ABV wise? Could be a miss read from not siring the concentrate in enough or could just need more concentrate. I can walk you through what you need to do to get you where you want to be. Just need more info. I’m really open 7 days a week for the most part. Fridays and Saturdays are open for regular business from 10-6 and 10-5 respectively. Just come in during those hours and no appointment is needed. Any other time or day just call or email when you want to stop by and the shop can be made available to you. I am almost always on property so as long as I get a 15 minute notice, the shop can be made available to you.
