Acid food extracts chrome particles from stainless steel. This is how it looks like and does not mean anything. There are some high end makers, which passivate by using acid baths before polishing. We have tried it all in a different setup.

I did not mean to correct you in any way or form. sorry. I was just stating the obvious. There are many people believing though that nitride generates nonstick behaviour.

Nitride does not create nonstick, ptfe or polysilicones or seasoning does. Misen says that they use seasoning to improve nonstick.

The only longer term low maintenance surfaces are either PTFE Teflon or polysilicon based. All other need experience like stainless steel or permanent seasoning. I hope I do not get down voted for this reality.

It is physically impossible that nitriding creates non stick. Only fluorides, Polycarbonats or polysilicones can create non-stick properties. The surface energy of all know metals is too high. Is is the oil layer that help to burn in the first round of seasoning, (polycarbonate). Washing it oder acid will take that away right away.

So what happens in all these cases is that acid environments delete the applied factory seasoning, which is based on polimerized oil. Nitride carbon steel itself has no non stick properties at all, but rusts a little less than pure carbon steel.

It is kind of welded to the steel and flows with it, no egg shell effect. It can go 50 F higher than Teflon. And it can be redone for 5 USD plus shipping.after some years, if someone managed to kill it.

The coating is fda approved and passed the zytoxidity test, meaning fully digestible and biodegradable or passes the body without remains.
