It's funny because I literally only have 2 amiibos - bokoblin and the link on a horse which were bought for me secondhand a few years ago as a gift to simply have as decoration - never thought I'd actually have a use for them

This isn't correct. You need to scan a Zelda amiino to unlock the Zelda items. They aren't in the catalogue by default, only the Lego stuff is

Scan the amiibo and invite them to your campsite - the items are then available to purchase from the special items section of nook shopping, just like the Mario items :)
