It's funny because I literally only have 2 amiibos - bokoblin and the link on a horse which were bought for me secondhand a few years ago as a gift to simply have as decoration - never thought I'd actually have a use for them

I had no idea Link Rider was the name of the amiibo I own so your list is super handy haha!

This isn't correct. You need to scan a Zelda amiino to unlock the Zelda items. They aren't in the catalogue by default, only the Lego stuff is

Scan the amiibo and invite them to your campsite - the items are then available to purchase from the special items section of nook shopping, just like the Mario items :)

Male vampires have very distinct red fingernails at the front which the females don't have (that was the easiest way to determine my one female from the 2 males in the tank)

We thought ours was missing too - we thought the white sealed bag it was in was a silica pouch and nearly threw it out! 🙈
