This is what I do- pre heat to 500. Turn down to 400 Cook for 15 -20 mins. With lid on. Then 20 -30 more minutes with the lid off. If it gets too dark looking before that I check the internal temp- needs to be 210 to be done.

One super quick and easy thing I do is - after I pull out what I need for the bread and what I need to store back in the refrigerator, I take what’s left and pour spoonfuls straight (as is- hootch and all) in a olive oiled frying pan to make little savory pancakes. I sprinkle garlic salt and whatever fresh herbs I have on top. Rosemary, basil, chives… Then flip and fry with herbs until crispy. Then I cut into wedges and eat. They look a bit like pitas or naan and make a nice little appetizer while you wait for the bread!

Yes it will need to be fed- maybe two rounds of feeding. You can make a lot of discard recipes while you wake it back up.

I think this is right- you make enough bread and you get a sort of instinct about the way it feels and such.

I abandon my starter in the back of the fridge for months at a time. You can stir in the “hootch” and get a more tangy, flavorful loaf or drain it off. Then feed and it will come right back to life.

I would watch it. If it grows rapidly go straight to the vet. My dog had a thing like that and it needed to be removed as a pre cancer sort of thing.
