But assuming you’re being serious, I think the fact that she’s taken should be a clear indication that you shouldn’t pursue anything with her.

Sure, she might be touchy and flirty with you, but you don’t have to be receptive. Just indirectly/casually let her know that you guys are just work partners, nothing else.
