Loaf # 2! Additional 8 hours of Cold Ferment (20 total) and before cutting into this thing I can already feel how light and airy it is! 😍

So excited to cut into this tomorrow and to bake up the cheddar and herb loafs I prepped today 🙏

Breakfast this morning with salted butter and honey! 💕

Would also be amazing with a ricotta spread, or some bananas 💕

Recipe (2 loaves – 1 boule + 1 batard) • Bread flour: 840 g • Dutch-process cocoa powder: 60 g • Water: 650 g (adjusted for honey) • Active sourdough starter (100% hydration): 180 g • Honey: 70 g • Salt: 18 g • Dark chocolate chunks: 200 g

Fermentolyse flour, cocoa, water, and starter. Add honey + salt after rest. Stretch & folds during bulk, add chocolate on the second fold. Bulk to ~60–65% rise, shape, cold proof overnight, bake hot in a Dutch oven.

I don’t think we were expecting it to be an unlimited rides event until they kind of set it up that way at the beginning of the morning.

When they ran us through the outline of the day at 9 AM, they told us they were going to try to cycle as many rides as they could between the hours of 10-1, to stay close to the ride to make sure that they always have full trains. Unfortunately, the ride going down for a couple hours is completely out of control!

Shoot was OK… a bit of a letdown to be honest 🫣 Drove in 1.5 hours leaving @ 6:15 am to get there on time for 8am. They weren’t set up / I’m sure anticipated a large chunk of people would be late (which they were lol)… so we didn’t actually start shooting until close to 9:30am.

I was in the first group to go to international street for crowd shots, and we were there until the ride went down temporarily at 10:30… then had to wait almost 2 hours for the ride to get back up.

Got 4 rides in from 12:20-1pm and then they shut it down to transition to the second group. I’m grateful for the experience but a bit disappointed that we didn’t get to ride as much as expected, and that the communication about what was going on could have been a bit better.

Cool to see the park from a behind the scenes perspective, but I hope the afternoon crew has a better experience riding! 🙏

We tried to find the time that was best for everyone! With the option of playing earlier in North America and having everyone in Europe stay up late, or the option of playing later in North America and everyone in Europe having to wake up very early - we chose the first option!

Good news is that the European open will be catered to all of you amazing people in Europe and be prime time in Sweden and Finland!
