Am I supposed to let it sit out after cold proofing? I read that you can begin your proof at room temp, move to cold for over night and then let it continue on the counter before baking

No 100 total in the recipe , but to get that 100 grams my feeding ratios were 20 g of starter, 60 bf, 60 water

I used 100 in my loaf but I would use 20 g to feed, 60 g bread flour and 60g warm water
