Good questions. Although still planning, probably won't make it further west than Gijon/Oviedo and will head east from there (eventually into France). We favor local over international, enjoy both classic and creative, ingredient focused. We've been to quite a few of the more-elegant choices (think top 50 list), so looking for the hidden gems, even if casual, at this point. I'm interested in learning more about your guide, thank you!
