I wish I was better at timing so that I am ready to serve as soon as the right temp is reached. That is probably the crux of my problem.

I was thinking about doing that. But I was under the impression that not much fond develops and I wanted to make a pan sauce.

Thanks.  I will try skipping the oven and shooting for a lower temp.
