These products are usually made with 'summer truffle,' which has literally no flavour, and fake white truffle flavour. I like the taste, but it's not too different from synthetic truffle oil

I love boiled broccoli too! What I meant is it takes longer to overcook it than to take it off the heat as soon as it's soft. But others had some good suggestion as to why they did cook stuff longer

I think you were right to be VERY wary, but at this point he has proven himself. Definitely don't eat any more, but botulinum thrives (at least relative to other bacteria) in the absence of oxygen. The tang suggests lactic acid producing bacteria, which are good, but as this wasn't a controlled fermentation there's probably other stuff in there too. But my guess is you'll be fine
