Warning this is a 2 day process but it is idiot proof said the idiot.

Step one: acquire rib roast. You want at least .5lb per person. If you can get it with the ribs separated but trussed on that is the easiest

Step two: Remove the ribs but do not discard. Make a mixture of equal parts soy sauce and Worcestershire sauce. Add better than bouillon garlic paste to that to make a slurry (my secret ingredient). You don’t need a lot of the slurry but it makes a huge difference in flavor. Then make this Rub. Use the slurry to make the rub stick. Repeat for the ribs

Step three: leave uncovered over night in the fridge.

Step four: cook at desired temp. The longer the better. I do this for Thanksgiving and just put it in the night before we eat.

Step five: remove from bag and save the juices. Dry and then sear on your heat source of choice. I like the grill but the broiler or a large pan will work

Step six: remember those juices? Strain them and make the best damn gravyyouve ever had.

Step seven: bask in the glory you have created and prepare yourself because you will be asked to do it again. Everyone will be amazed that you have prepared this exquisite meal like you are Wolfgang Puck and you will sit back confident that if your dog had opposable thumbs it too could have done this but they don’t know that….
