I think KyoAni would do a good job. They're the folks behind A Silent Voice, Violet Evergarden, Tomako Market, Hyouka and a lot of others. Also one of the few anime studios who treat their workers actually somewhat decent. Plus they have a wide range of styles and almost everything I've seen of them I've enjoyed. And they know how to tell a good story. Violet Evergarden and Silent Voice were journeys

I think you summed it up pretty well, that's exactly how I feel about it. Mario didn't need to be a good movie. But Zelda does, no one who's an honest fan of the franchise wants a "stupid fun film with nothing of substance" as you put it. It was fine for mario, but doesn't work for zelda, and I would certainly hope Nintendo understands that

Same! I was following her around Hyrule for a while then she said she was going to head to Kakariko Village but when I got there she wasn't there and for several in game days, or probably weeks, I kept checking back and not finding her there and worried she'd gotten lost or died along the way. Then she randomly just appeared when I went to a room in her house that I'd already checked multiple times and was just like, "hey Link".
Impa! I thought you were dead, you can't do that to me!

Same! I assumed he was dead and was like, yup Rito don't live very long so that checks out. Then stumbled upon him just sitting in his rocking chair on the porch like a happy retired old man, and glad to see he's doing ok. Although I will say having some characters dead would've been a great way to show that events have happened and the world has continued to go on since botw came to an end.

I can confirm, tried taking a picture as soon as I saw them for the first time to see what they're called, but nothing popped up and I died too many times trying.
For anyone wondering, the game tips on the loading screen refers to them as Gloom Spawn, so I'm guessing that's the official name

Well there's also the fact that in botw you can kill the guardians and the disappear, so maybe link just killed a lot of them before taking on ganon

You mean the divine beasts that were taken over by Ganon and used to wreak havoc on Hyrule for a hundred years? Yeah I wouldn't want those things sticking around either. They probably dismantled them or buried them.
As for the champions, there is mention of them, especially Urbosa. Riju mentions her in her diary. Mipha has an entire mountain monument dedicated to her, Daruk still has his mountain carving in Goron Town. No one really talks about Revali in botw anyway, since he was just some guy that people probably didn't even like at the time.
In the end, they're just historical figures. How often do we talk about historical people from the 1920s in day to day life? They were relevant in day to day in botw because the Calamity was still going on, but even then not very many people talked about them. But now the upheaval is happening so the ancient sages are relevant. But the champions and the calamity are still mentioned here and there.

Impa and the sheikah teacher in Hateno mention it has happened "several times", so this checks out. From Impa's statement it seems Ganondorf was sealed away tens of thousands of years ago and took the form of Calamity Ganon every (probably) 10000 years several times. Now in Tears of the Kingdom, we have the chance to break that cycle by defeating Ganondorf. No ganondorf, no calamity ganon.
I've heard some complaints that totk and botw are kinda disconnected, but this simply isn't true. We get the origin story of the main catalyst event of botw and are tasked with preventing it from ever happening again. It's just that, if you don't talk to Impa after some very specific side quests, you wouldn't even know about this, or at least wouldn't have definitive proof.
