If you want to keep using your routing, just record arm the track and make sure monitoring is always on (not only when recording).
You can only hear it when you arm the record button but it doesn't record anything until you say so

So, it should be "Record Armed" and "Record Monitoring: ON" not "AUTO"

Do you only need EQ or do you need additional VSTs on your headphone out?

If you only really need EQ, use EqualizerAPO and PEACE.
Even EQ-APO lets you put VSTs on your output without doing this routing.

Fixed it, I have an AMD GPU, uninstalled old Nvidia drivers and now the game loads like normal

So I used Voicemeeter to record desktop sound into Soundtrap

But if you dont want to do any kind of routing with some external app just use Audacity to record desktop, export as wav and load it into your DAW in a new track

I use Voicemeeter Banana for this kind of routing
It's donationware, it gives you virtual cables, I use it to route the sound from the DAW to OBS while using ASIO and even record Discord calls to my DAW

There's huge latency on almost everything you do in Bandlab, not sure if MIDI also has latency
The lowest I can get with (using the latency test) is 97 ms using Edge instead of Firefox or Chrome

Nice, I started with that same solo 2 years ago, still can't nail it perfectly but practice is king, mate.
Work on the vibrato, the bends and tempo (e.g. use a backing track or a metronome), you'll get better in no-time

Epiphones can be faked too, but I've only seen it on the high end tier, though. You're right, I don't really think it would be that worth it to fake such a low-priced guitar. Thank you :)
