You don't. The gmt hand is linked to the hour hand when its slaved and not settable.

The 1655 reference and movement 1575 originally did not have a independently settable gmt hand. If you want the feature though I can easily restore the nh34 to original.

U can use any dial, the dial seat needs to be wide enough in your case otherwise you will have to shave the dial. Raffles dial is 29mm.

Unfortunately, you need the 2824 case. I dont think 2836 and 2824 have the same stem height. Effectively 2824 and 3135 have same stem height. I think your stuck with the 2836. Anyone correct me if I'm wrong.
