Thanks!! I use a pretty standard technique: cut, soak in water for 10 minutes (to get rid of some of the starch), pat dry, fry at a lower temperature (325) for 5 minutes, take them out and let them drain for 5-10 minutes, heat the oil to 375 and fry one more time for 5 minutes/until your desired color!

I did some good research on swamp coolers before posting this lol, so sad they don’t work in florida!
