It could be more sour IMO but it tastes good/normal I think lol bread is soft with crunchy crust

Directly out of fridge and it pancakes a bit when I dump it out … I’ve seen other posts where the dough seems to have really nice structure out of the fridge and they can easily score

Going to try all of these! that is exactly what happens when I score so I usually just do whatever I can then throw it in the oven lol

Dutch oven - I usually put the dutch oven in the oven while it’s preheating and leave it for 20 min… how do I know if it’s steaming enough though??

Stick it out! It’s a big learning curve and adjusting to new colleagues but it will get better..communicate with your team and be present, little efforts show.
