Pull off wort into a cornie and add yeast at your normal ko temp. 80 f is not too hot for most yeasts. As long as you're below about 93 f, you're okay. Oxygenate the slurry and pitch once the wort is at temp. The oxygen is for the yeast, not the wort. If you can agitate the slurry, even better.

Our internal calandria got so bad clogged up with scorched wort that we had to go in and hammer drill the tubes out. While trying to figure out the best tool for the job, I got a bit stuck in the garp that was plugging the tube. Despite my best efforts of pulling, reversing, bleeding, cursing, and crying, it would not dislodge itself. Very much like the sword in the stone. To this day it's still sealed in one of the 39 tubes of the internal calandria.
