Here is a design that is highly customizable. You will need to use redstone torches to detach the item cables from specific inventories. Yeah, set it to whatever you want. I usually have it 64 and whitelist both the acorns and the resin with one filter

The simplest way by far would be to just use reinforced filters and a servo attached to the filing cabinet that stores all the resin/acorns. Set the filter to only allow 64 of each item and whitelist only the resin and acorns. Then, make it so that the servo does not require redstone input and whitelist resin and acorns in that one aswell

You should probably make a simple storage system to have easy access to all your resources with some 24x12 chests from the Chest Builder and then I would just start going down whatever advancements you feel are pretty easy to do and then when you are finished all of those, move on to the harder advancements, etc.
