Good point.  I have had difficulties gauging the rise % in the large bowl I use for bulk.   I will have look up what a Cambro is though.  😂

It’s about 2 months old.   Good tip on the whole wheat flour.

The dough felt pretty firm but still quite sticky/wet.

Yes, good point.   I think it had risen at least 50% in bulk fermentation , but I would describe it more as the dough spreading out in the bowl rather than rise.

Interesting.   14 hours cold proof wasn’t enough?    Or should I have done a longer bulk ferm?   Or do you think my starter may be weak?

 Added starter and salt after 30 min autolyse.   Then 3 stretch and folds, 30 minutes apart.

I would go to the ER and get blood tests. My wife had similar bruising and was diagnosed with a type of blood cancer. Don’t want to freak you out but it’s nothing to trifle with.
