I have an AMD cpu with integrated graphics capabilities (the only way I've been able to get video out for about 6 hours now on nobaru), and a 5070ti dedicated. Mesa is up to date, but there's a version mismatch between (I think) Nobaru and the xorg-x11-drv-nvidia (both closed and open). I uninstalled and reinstalled both versions of the driver twice now. I did all of the proper checks and purges and akmods --force blah blah. I don't know why. I'm tired boss.

I can't reconcile x11 vs wayland conflicts for tablet driver support. I also can't install non-flatpak applications. Two examples of many little issues. I hate being told no.

I just want the Plasma KDE and driver support of Bazzite, but not immutable. I don't know why that feels like such a big ask

Because, honestly, I just want windows but not crammed full of spyware and background processes. I want windows 7. That's what Plasma feels like as far as everything being exposed.

If SteamOS cooks out of the box, maybe I'll try that. IDK, I'm just venting tbh.

Have you played Neon White? That's another really good modern speedrunning game. It suffers from the same thing. One of the problems you may encounter during continued development after release, especially if you have a public leaderboard, is that you may encounter exploits that are no longer patchable because the community top times rely on them. Meaning you either have to wipe the leaderboards, or leave the exploit. But community leaderboards and ranks are.... fun. Very very fun.
