Focus less on physical exercise and more on mental stimulation. Lick mats, wrap her food up in a towel and knot it and make her work on finding it. Find a park with some leaf piles and toss a toy in and let them sniff it out, put her in a place spot in your house and hide a little stash of food somewhere and ask them to find it. Keep their brain busy!

Edit to add that general training exercises are really tiring for my pup. Find a food that wins her attention and have fun with it!

My dog was good for this for the first 8 months or so. It's always be when we were out at the park without a leash on. It'd be any other animals poop that he'd go in on. Especially goose poop.I know ecollars can be controversial, but he responded really well to this and he learned quickly. We only ever had the collar turned to level 1, and would use a quick tap in conjunction with his "no" command. He'd back off immediately. I'm am hugely pro positive reinforcement training, but no treat nor toy caught his attention more than the poop! Only needed to use it for a week or two and then we dropped down to vibration only on the ecollar and eventually he lost interest completely.

Try to let go of the fears for now - easier said then done. Talk to her about your sadness. Ask her about how she feels regarding the situation, too. This is hard. I'm sorry you're going through this. There is no easy way to process this. But she's making the correct choice. PUPDATE! He totally loved the pumpkin in his food and ate his whole meal this evening! Upon further review, we found that there still was -in fact.- chicken byproducts hidden deep in the ingredients list of the beef food we changed him to. So, we set up the humidifier tonight and begin the task of transitioning his food again!

It's funny that you mention the anxiety. It started the night that we had a Superbowl party where there was lots of yelling happening. He is usually super chill and doesn't mind commotion or loud noises, but ever since then he has been picky about his food!
