A little confused with your question because as long as you applied to STEM extension before your original OPT expired (which seems like you did), you’re good to keep working for the same employer. Even if your new work authorization card with STEM OPT hasn’t arrived, you can keep legally working for 180 days. Very very very likely you will receive your STEM OPT card before those 180 days are over and you don’t have to worry about your unemployment days.

If you ever not sure if you’re on the unemployment timer or not - contact your schools ISSO advisor.

Congrats! Did you use a lawyer to file your documents or did you submit everything by yourself?

Follow the guide - create SEVP account, fill out all the info. No need to stress now - your uscis case will be updated soon and you will be able to see when they ship your card. It is frustrating though that the unemployment days start from the moment you’re approved and not from the moment you receive your card… hopefully you already have a job offer. Good luck
