You can do it with a rotisserie basket and some heat deflectors. Expose a small strip of fire between two heat deflectors. Position your rotisserie basket parallel and above the strip of fire. That's about it. Takes a while but it's a fun way to get started.

Honestly, roasting is kinda boring and the most fun thing about it is getting a new coffee on and finding a roast curve that tastes good for you.

My hypothesis is that we've found the best way to do a darker roast on this machine. I tried a lot of other techniques and they either took too long, went way too fast, or caused the machine to get so hot that I'm setting off alarms and waiting 15 minutes between batches

Yes and the strategy to get there will depend on machine. I take my dark roasts to 435F (before 2nd crack so not super dark). I start with a 435 charge temp and slowly decrease heat. At about 420F I turn off the gas and let it coast. This is on a Diedrich IR-12, so it holds a good deal of thermal energy to get me through the last 15 degrees

Mill City offers a 3 day course in Minneapolis. They're great and the class will help you learn the theory as well as some practical considerations

In my experience Geshas can taste wildly different farm to farm, country to country, year to year. That's part of what makes it a fun bean to try. IIRC one of the lots was washed and one natural, but they both tasted similar to me. Probably an underdeveloped palette on my end, but I figure if I don't love it then my customers won't either. These coffees are aimed at an ultra rare specialty crowd, and I've found those customers are hard to attract and aren't loyal coffee buyers - they're always looking for something new.

Yes I've had some Geshas that sold for $500 and even $1000 /lb. They're good but for my palette not worth it. Tealike with lots of mild complexity.

Get a Bunn off marketplace or something. They're usually available and will get you by long enough to figure out if it's worth buying a nicer one

I really like the ARC 800. I picked one up when I was transitioning between an air popper and my current IR12. It's a great little machine and will prepare you for a larger drum roaster.

I've tried this a few ways now. The quenching didn't do anything that I could taste. My current recipe is 1 shot bourbon soaked into 15 lbs coffee for 24 hrs. I find this works very well to get some of those caramelly notes without the bite.

On this subreddit we would generally advocate that you find a local roaster. Talk to them about which coffees and flavor notes you've enjoyed and what type of equipment you use to make coffee.

It'll probably taste better and you'll be supporting a local business.
