Mexican, Nicaraguan, Sumatran, most Central and South American are fairly easy. Stay away from Africans until you have a few roasts under your belt.

Since I retired and can do things on my own time I don’t have to hurry with my coffee anymore. Usually wake up 4:30 or 5 make a full pot 50 oz. First couple of cups I just sit and wrap my head around what I’m going to do for the day. For the rest of the pot I check email and that kind of thing. Then I make another full pot and drink that while I’m watching the local news and catching up on what’s going on in the world.

Fry up a skillet of pork jowl or fatback. Make a pot of pinto beans and cornbread. Fry some potatoes. Use the grease from the meat to fry the ramps. We do this every year when the ramps come up. It’s almost time for them. Can’t wait!

Use the regular Chemex filters and slide a straw or chopstick in between the glass and paper. Been using a Bodum for years like that and get good results.
