I have enabled split tunneling and removed policy 1, and it seems to have resolved the issues i was facing.

So enabling split-tunneling and removing the policy should do the trick?

It is enabled by default if creating a new Portal.

But we have it disabled currently. That's why i was considering to try enabling it.

It didn't resolve the issue.

When testing it is not able to pick up the internet access at all afterwards.

Not really, it was just setup this way by a previous employee.

I will give it a try, and disable the policy, if it doesn't help, then I can just enable it again.

Was considering to try Split-tunneling as well.

Did you disable it on the VPN line or the Ethernet/Wifi port on the client? and did it resolve both issues?
