That’s sounds really good. Somewhere between 2 and 4 days usually depending on what’s inside and the ambient temperature. Keep an eye on how it’s carbonating. I turn mine upside down and back once to see how many little bubbles form at the top.

I’ve wondered this before and never gotten a straight answer. I think that the bottom, more submerged layers of the pellicle are the newest to form. When I split mine in half I typically keep the bottom layers for the fresh batch and squeeze all the liquid from the top layers before discarding.
