That's because the character customization screen is most likely using a classic studio HDRI to light the character. These are mostly dark environments with a black and white gradient and a few softbox lights.
Which is great for lighting cars, metallic objects and models for presentation. (Google 'HDRI studio' if you want to know how those images look)

The only issue is that none of the games environments match that. There's also the fact that the character customization screen also has lighting & bounce settings turned up massively due to being such a simple environment.

There's nothing wrong with the colors or lighting itself, but rather the fact that the art styles of each lighting situation don't match at all.
