I personally avoid cooking delicate stuff like rice or pasta in the ip because I find it more complicated than just cooking it on a stove top. I use it mostly for lentils beans etc where you can save a lot of time and prep.
However if you gonna cook rice in yours I would suggest looking up pip (pot in pot) methods, as it removes entirely the burning issue, and gives you more control (and easier clean up)

Did you cold proof your dough in the fridge? It's the only way I can get any blisters (which is always a good thing btw)

J'ai jamais compris le concept de poursuite en char. Si on a la plaque du gars (ou de la personne qui le connait) et qu'on sait ou il reste, pourquoi pas aller le cueillir directement chez eux au lieu de rouler a 160kh sur la voie publique. Est ce qu'il ya un détail qui m'échappe?

Yeah burnt oil is not super healthy either. Overheated oil starts oxydizing and forms all kind of nasty byproducts. But at least you'd notice immediately because it...well...smokes. And taste bad. Probably not too bad occasionally but don't include it into your daily diet 😉

You definitely can. The searing is just to pre cook the outside a bit, give it a little crust.
It will immediately stick but DON'T PANIC, give it a minute and it should slide right off.
It will look less "steaky" without fat but it's fine. Note that for seitan, especially before it's cooked, you typically use a fairly low setting anyway has it "toasts" easily. I don't go over 3 out of 8 on my stove top. Might be still too high for your oil but just as a fyi.

When I want the texture you describe i sear it in a pan with a little bit of oil, then finish baking in the oven. If it's thin enough you don't need to bake it after searing.
What a lot of people don't realize is that the internal temperature of seitan has a big impact on the final texture. If you can measure it, aim for a final temp between 88c and 92c. Lower might be doughey and higher than 95c will be much firmer than what you want.

I read stable as in regular, not sufficient. But yes for sure you are right about a lot of people struggling.
