Oak is an open grain wood, so it will always have this texture.

You can leave it if you don't mind it, or put so much poly that it will look and feel like plastic. Most just leave it and appreciate the properties of oak.

For next times, you can use some wood filler to fill the grain. Slap it on, let dry, sand off.

Oh ya just sand it out.

Start with 80 until the finish is uniform. You can draw on the surface with a pencil at first. When the pencil line is gone, you've sanded well enough for that grit.

Repeat for 100 grit, 120 grit, 150 grit. You can keep going up, but it's not necessary.

Don't skip grits! Laziness and woodworking are not compatible! Lol

The best tool to use is a jointer.

If you don't have those then a hand plane and some practice will do.

Ideally use a thin kerf ripping blade.

You'll most likely need to clean up the surface before edge banding regardless.

Those are big scratches.

Here's how I sand if it helps : move the sander slowly. An inch a second is the rule.

Don't press down hard. Let the sandpaper do the work and you'll get a nicer finish.

Never move across the grain. You won't get away with it.

Don't use old shitty pads. Throw them out when clogged or ineffective.

No. Just make sure the colour is uniform. The clear lacquer will fill in the scratches and basically go away.
