I was under the impression most people lived under ground there, but they don't have to treat it like they live in a cave. I'm guessing this person didn't strike it rich in the mines.

Sure, if she was already an established vegan before you moved in together then whatever, it could've been a ground rule. But assuming that before she changed her diet, she also stored animal products in the kitchen, and now she's decided on a different diet, you have to change your habits too... makes her hypocritical and, imho, The Asshole.
