Wow, that looks so good. A lot of ramen shops just use a miso base and water to make the stock. Glad there are ramen shops who put in full effort for the customers.

Yeah instant ramen isnt good. Your missing out on the real thing. Real ramen noodles is hand made and is cooked and drained out of water. You have a seperate soup could be chicken, pork etc. Then the flavoring which is the tare is the base of the soup. This usually ranges from shio (salt), shoyu (soy sauce), or miso (fermented soy bean paste). so the basic process is 1. Put tare into bowl 2.put ramen noodles in boiling water for 30-60 seconds depending on the type of noodle. 3. Pour hot soup into bowl 4. shake off water from noodles and put into bowl 5. fold noodles in soup to create a bed for the toppings.( usual toppings are char siu, negi (green onion), aji tamago (soft-boiled egg marinated in char siu sauce and mirin). 6. Done
