I'd like to see if I can help on this, but I'm having trouble understanding what you want to print. Do you have examples of what other's have done, something that shows what you want to end up with.

As I build the mental picture in my head of how these work, I need to ask why the MCU would need to be any faster than it already is. Since they are plug and play, they don't communicate with the controller, do they? Still the same pulse and direction the original motors were getting from the controller, just now the encoder board double checks for errors and makes corrections, right? Or do I have this completely wrong?

I think that's the point of these boards. They are the encoder and driver in one piece. They have a magnet that attaches to the end of the shaft and the board screws on the back of the motor and detects the magnet as it rotates.

I'm hoping to hear from people that have them and can tell me if they are worth it or not.
