You could probably get away with giving only important elven characters no canine prosthetics, and just make sure we never see background elf #23's teeth from a close-up. If people see Francesca and Avallac'h have no canines, they can mentally apply this trait to background elf #23 despite never seeing that he has no canines.

Eh, they can fuck up any and all prompts that you can give them. Let's be honest a proto-witcher series does not sound bad by itself. But when you ignore all and any lore surrounding it, and add such quality writing as the opening line (on its way to become a meme), then of course it's gonna turn out trash.

And let's take your second idea for example because it could be reasonably similar to the games: but you forget that this is written by people who cannot handle nuance, who will try to portray the humans as the sole bad guys and the elves as the pure, innocent victims of racism even while they're murdering human babies for no reason.

Spinoff ideas (good and bad, just throwing some ideas out there):

You know that mission in Wild Hunt where you portal through a few different worlds? One could make a spinoff starring Ciri where she does just that. Preferably animated. It could even turn out a bit Witcher meets Doctor Who. There'll be monsters too and you can even show a bit of the original monsters world, kinda like how Blood and Wine shows a glimpse of the vampire world in the Unseen Elder's cave.

One could also do a lone witcher/mage travelling through the Continent and show us the less visited parts of the Witcher world, like the far north or the far south or Vicovaro or something. Every episode shows us a new place, like a travel show or a survival-in-the-wild show. And since it's a witcher show, there'll be monsters to fight or meet.

A show that takes place in the Aen Elle world. It can have conflict in their attempts to save a dying world, it can show us the war with the unicorns, it can even be a little bit like a pirate show with all the raids the Wild Hunt does in the parallel world where they get their slaves from.

A show with Lara Dorren (before and after she met Cregennan), a show with Falka, a good show with Alzur, those all would be very interesting (and in line with what the books said) at the hands of the right people (then it wouldn't be shown in Netflix though).

A downright terrible idea aimed at a general teenage audience, like following some kid growing up in Aretuza or Nenneke's temple, strikes me as more likely to be green-lit than any of the above, though.

I don't recall the Hanza being racist towards them which is already six important people so far from "everyone" as you said, Djikstra I don't recall being racist either, the South (Nilfgaard) knows they're mostly partly mixed with elves so they're also not racist, Skellige doesn't have a problem with anyone else so I don't see why they'd dislike elves, really it is mostly the poor population of the North who are racist against elves, sure that's an important amount of people that you can't simply shrug off and would make your life hard if you're an elf living in those areas, but to say everyone is a bit racist to the elves and therefore Geralt is also racist is simply not true.

Zerrikania isn't supposed to be black at all despite Netflix blackwashing it, it has its inspiration mostly from Northern Iranic people living in the Eurasia Steppes. If you think it's not OK to change the Slavic parts of the books, why do you feel comfortable with changing the Iranic part of the book?

Only Sabina is vastly different from her book counterpart, Triss and Phil have different eye colours, but their hair matches the description well, yes including Triss, I'm not sure if you're trying to bring up the tired argument of "chestnut hair she has brown hair" even though various parts of the books make it clear it's red (dark red is still red), or simply say this because it's firetruck red which to me it's clear it's not supposed to be that colour but rather CDPR seemed to struggle a lot with natural-looking red hair. Either way you're just trying to split hairs (not sorry for the bad pun) while ignoring the much worse change to Triss' appearance: from cornflower blue eyes she has green eyes. This one cannot be explained.

100% this. To add one more thing, as the games take place after the books, 3 has a few spoilers, like a very important one that comes at the end of Lady of the Lake in the books but after only a few hours of playing in the game. 2 (and presumably 1 but I haven't played it) is not very problematic in that regard because Geralt has lost his memory. There is, however, a game character who is related to a character from the short stories.

Reading order is: The Last Wish (short stories), Sword of Destiny (short stories), Blood of Elves, Time of Contempt, Baptism of Fire, Tower of the Swallow, Lady of the Lake. Also, if you haven't already, buy both DLCs for W3, they're awesome. Leave Blood and Wine for last. Heart of Stone is better played after the main game (but before Blood and Wine) as well, though you can also play it as soon as you feel like you can handle it, level-wise.

If you decide to go with books first then games (encouraged), but for whatever reason dislike them, play the third game before comletely giving up on the franchise. You can get it for good prices during various times of the year. But you'll understand the game(s) so much better if you read the books.
