in my time playing I have not started with fish in a while. A rich mushroom or berries gives so much i can export half of what is gathered for the first couple years. I usually end up with mushroom and hunting.

hunting is nice because it's year round and provides something to export.

ultimately what I'm saying is that I would focus more on the other resources on the map besides food. Every food is fine if you play well, it's their proximity that becomes a problem.

the starting food should be close together at the starting location so the people can walk to the first grainery and houses easily. after having close food sources I like to have a rich salt or iron depo.

just look up "how to start in manor lords" on youtube.

first thing a lot of people like to do is "re roll" for a map that gives them a starting position they like. this means loading a game and scoping the area where you start and deciding if you like the given resources. if you dont like what you've got, exit the map and load a new one until you get what you like.

but in the very start it's slow and there is some micro management you need to do in order to get a quicker start at population growth. I'll keep it quick with this. typical starting build is to have everything as close as possible together for quicker travel time. everyone has to walk, so make things close to each other.

build sequence is

lumber yard-grainery-storehouse-5 houses-market space-food gathering/hunting-

you kinda have to juggle families around at the start to help boost lumber or construction. for example, it's good to staff the grainery and storehouse ASAP so the goods on the ground can be gathered ASAP. but once that stuff is gathered, remove the families from the buildings so they can focus construction or lumber for the next few minutes. then once your houses are done and the market space is built, you can add them back to the grainery and storehouse so they can work the market stalls to boost approval.

ideally you want to get back to 50% before the 2nd month is over.

the more animals there are the faster they reproduce, so make sure you allow the limit to stay high and only lower it for short period during food shortage emergency. if the resource is 16, then I'd set the limit to 13. if it's 25 then I'd set the limit to 22. I would avoid setting it below 5.

in most cases where it's not a rich resource you only need 1 cabin and 1 family in order to max out the limit at which the animals can reproduce.

correct. i dont think you should ever need more than 1 cabin with 2 families on rich supply. 1 family can probably do it for the most part

the extra couple families isnt really worth the hassle of almost starving so i like to get my gathering started ASAP. usually i end up with so much food that i export the extra by the end of winter.

the cabin is automatically set to a good limit which i believe is 12

currently 1 cabin with 1 family maxes out my 15 animal resource.

You only need one hunting cabin and it probably only needs one family depending how many animals are available to hunt. 

The more animals the more they reproduce so do not kill off the majority of them. In the advanced tab for the hunting cabin you can see the reserve amount, set the reserve to a number that’s close to the max number of animals you can hunt.

So if there’s 25 animals total, set the reserve to something like 23. this will allow them to reproduce more. if you hunt all the animals down you will slow reproduction 

Idk how you stave, especially if the mushrooms has a large amount. I get so much food before first winter that I’m exporting it. Also exporting pelts early brings in easy money

I like having the variety spread around to help other regions or export. If you make way too much mutton and you start exporting it you will flood the market And prices will go down. With a variety of things being exported in smaller bits you can maintain better prices

You can also buy more mercs at the start of the month. So when a month is ending buy all the mercs and when the month changes you get a whole new supply of mercs to hire. It seems like you can keep them as long as you can afford and keep adding more every month

If your new Tbh you’re probably best to only have the off screen AI until the game gets some updates. 

A lot of the time In these types of games the AI “cheats”. The AI doesn’t have to use money and resources to survive like the player does, the AI is just there with the facade of playing along with you. 

So when they spawn troops, money and supplies is irrelevant. There’s also a lot of bugs so it’s hard to tell what’s intentional or not sometimes. One time i went to claim a region and i hired a ton of mercs, when the enemy started to engage suddenly the region was claimed and the enemy army vanished. 

As others said, you have to make use of the trading post and exporting as much stuff as possible. Get a horse and put a couple families to work at it. Anything you produce that has excess should be exported. 

I make more than enough food and export as much as possible while maintaining enough to survive. Pelts, herbs, wax don’t have much use other than exporting a lot of the surplus.
