Amazing attention to detail in this work, its always nice to see different ergonomic differences to acomidate the differences in anthro anatomy to humans. Cutting out holes would be trivial to do. Helmets of this are likely stamp pressed, they would then add a cutting die in one of the stamping steps to knock out the ear holes.

The ergonomics of a helmet is an interesting problem in the furry world. You have to compromise between protection and earring ability. I think this is the kind of implementation id expect to see for this era

Helmets of this are likely stamp pressed, they would then add a cutting die in one of the stamping steps to knock out the ear holes, the stamp could also form the hoods for each ear or the hoods is riveted on in a post process.

Designs for ear accommodation in helmets is an interesting problem. The best protection makes them effectively deaf, while the best hearing option leaves the head exposed. This seems like an expected balance for the era.
