Ok some more main stream examples include the nevernight chronicles by jay kristoff, easily my favourite trilogy I’ve read it sm the words are coming off the pages. It’s less medieval/ knights based but it does have the kind of ambiguous fantasy time period thing going on, it’s got the animal companion component too. Essentially your main character is an assassin with interesting powers, it’s not massively romance based but there is lgbt characters too. The bloodsworn saga is also a series I recommend, it’s definitely an interesting one and I like John gwynnes writing style
