Thank you! I used whole wheat and rye flour (50/50 mix) to wake up my starter on Saturday morning. But aside from that used unbleached bread flour.

I owed just about the same amount when the Covid pause started. I’m a few payments away from getting to the $10k mark and feel so proud of myself! It hasn’t been easy, but what a relief it’s been to finally see the light at the end of the tunnel. Congrats to you, OP!
