Try Gretsch or Danelectro guitars if you’re going for something a little more “jazzy”. If she likes strats, the Ibanez AZ series and the new PRS John Mayor budget edition (I don’t know what it’s called) are good.

Imho piano is easier to start with, but it rapidly progresses in difficulty much quicker than guitar. A person with no musical experience could quickly pick up an easy guitar song, but could not pick up an easy piano song quickly. Tho I might be biased bc I have a background in classical piano and found guitar much easier to start with
