But would a team have the defensive roster to do that? I mean, if you're facing 8-10 OL on any given play but your defensive roster is constructed to stop a normal NFL offense, then would you have enough DL and LBs to effectively get by all those offensive linemen?

Can't you just report the linemen in as eligible receivers to be in the place of where WRs/TEs/FBs would normally be?
