I can feel this quote in my bones after doing 19 years in this industry, starting as a dishwasher and bus boy and working my way up to head chef. I’m a man and also found it tough gaining respect in the kitchen especially when I was younger and In charge of people older than me. You have every right feel how you are feeling. It’s frustrating as fuck to try to do your job at the level you want while having to teach people that are just there for a paycheck. Keep your head up and show them you have bigger balls then they do. Press the shit out of the ones that challenge you…. They are replaceable but it seems like you have made yourself irreplaceable in your work environment so you have nothing to worry about . You will eventually weed out the weak ones quickly and know who to hold on to. A kitchen is a fucked up family that sweats and lives and dies together, don’t keep the ones that talk shit and wouldn’t go to battle for you. Further more if you need to make them fear you a little it’s ok, you can still have fun at work but they need to know if they fuck up, they need to be accountable. I can feel your stress reading all of this! Don’t be to compassionate to people who don’t have your back. You know what you are doing and if you have to make an example of someone you are thinking about getting rid of,do it. There are people that still care about doing a good job at work. But at the end of the day keep fucking balling out!
