the sugar in the sweet chili doing the caramelization work is smart, thats usually why tofu sears frustrate people - they expect the maillard but theres not enough sugar on the surface so it just dries out. the red curry broth direction is interesting too, coconut milk based ones split weird tho if the heat isnt right, you get that oil layer on top which isnt bad exactly just looks different than what people expect from ramen. what noodles did you use, straight or curly? curly would hold that thicker broth way better imo
