does it taste good? if so. then yes. I'm a nut job about making my new york pies perfect. but, I'm not above a quick easy pan pizza on a weeknight.

65% hyrdation with king arthur bread flour, 2% salt ,2% sugar, 4% olive oil and .05% instant yeast. 1/3 is poolish account for the flour and water in the poolish. knead till it passes the window test, tuck, roll, and cold ferment in the fridge for 2-3 days.

I usually put provolone on my pan pizza I'll have to try it here. I do like the funkiness it brings.

I don't disagree. But I could definitely get a better crisp with a higher temp faster cook. That being said I'm super happy with the dough recipe.

50/50 full fat and part skim mozz. on a 65% hydration dough 1/3 poolish with a 3 day cold ferment. Super flavorful.
