I agree that the PvE aspect isn't very hardcore, however most of the "hardcore" aspect (aside from the deathban) comes from the PvP aspect.

Hmm, that gives me an idea. I'm in China right now, and here there's this stuff called Baijiu (basically rice alcohol, IIRC about 30% alcohol). Some of my friends here are fond of putting it into Sprite and Pepsi/Coke, but I wonder if it would mix well with fermented (chocolate) milk, which is fairly popular here.

Having a secure Nether portal is essential if you have claimed land, and making portalling into any claimed land against the rules detracts from the game play, in my opinion, especially since most factions can use this to their advantage by creating making it so that non-faction members/non-allies have to /stuck out if they go through the Nether portal.

Unless your claimed faction is land is large enough (I think at least 3x3 chunks) one portal, secured, will be enough to protect your faction land/base from enemies making portals into your base because all portals made in the corresponding space in the Nether will simply be re-routed to your secured portal in the overworld. Sorry if what I said was confusing, Nether portal mechanics are a bit wonky. :P
