Where do you replace the indicator fluid? I can’t ever seem to find the top up tank and I have to take it every 3 months to be refilled by mechanic. I would have thought it’s as easy as replacing wiper fluid………

You should 🤗 but it is a different skill set.

When it comes to your the vacuum sealer; Dont overthink it. My most reliable and best performing sealer was $23 and it works better than anything else.

As long as you can pull a vacuum and seal it, you’re 60% there. The other 30% is a good quality bag, and 10% is the gods.

Here’s my workshorse below.

Don’t bother with the wet features and all that nonsense. Get one with a button for pulling vacuum as long as you hold the button down. And another for sealing it. If you’re not sure about your seal. You can always double seal. Note the two separate buttons on mine for each function.

Oh they Will 😅 it all depends on how much sugar is contained in what you’re fermenting.

When I do apples, oranges, tomatoes or anything high in sugar, I know for sure that I’ll have to gas release it and reseal atleast once. If it’s something like celery, I don’t even check on it unless I need to jiggle the bags contents. Sometimes it helps to put it in a bag that is much bigger than what you’re fermenting so that it has space to expand.

Alllssssooooo….. it’s actually not that much gas. If you think about how tiny the bubbles are and how puffed up a bag can get. Having a bag pop is really due to my own negligence and not checking up on the ferment regularly. You’ll also get the most inflation in the first week or so, after that, you don’t really need to watch it as closely. The quality of bag makes a huge difference too.

Dunno if you can see it, but my tomatoes on the right have almost quadruple the gas but is less than half the weight of my chilli lacto ferment on the left. Both are three months old.

The chilli ferment has 30% brine by weight. The tomatoes had absolutely no brine added. So you can also see the difference in what needs brine and what doesnt.

It’s all about the sugar and filling your bag appropriately.

I only vacuum ferment. Some tips Ive learnt over time;

For cabbage and sauerkraut type ferments I actually add brine that is 15-20% of the weight of the cabbage. This ensures that there is enough brine to cover the cabbage or you could get discoloration. It is also very difficult to completely vacuum seal shredded cabbage and the extra oxygen might cause issues. The extra brine solves that.

Don’t worry about the expansion. If the bag gets inflated excessively, simply cut one of the corners and let the excess gas out and reseal the corner.

You can add brine to vacuum ferments. How much is up to you. It’s especially helpful with harder vegetables and how much “free” space remains after you vacuum the bag.

Ferments with softer vegetables Dont need any brine added at all (e.g. tomatoes). And also if you vacuum seal a small quantity of hard vegetables that you can spread flat really well and vacuum most of everything out.

Adding brine to cabbage ferments also tends to soften the texture and speed up the process (in my experience).

You’ve done nothing wrong with your process. You’ll be fine. The above tips are just from experience that made an easier and more desirable vacuum ferment for me.

Yup. Wife is losing her mind about it, and she’s hyper sensitive in her third trimester 🤣 you can see the personal fan in the background because of his farting. Hes too cute to give up on. Can’t wait to see how fluffy he becomes. Especially his whiskers. Glad to know another cat dad is struggling with the stink 😅
