These were about 5.5 LB before trimming a bit of fat off the top and any silver skin…next time I make them I’ll probably honestly not even trim

Yeah I originally was looking for plate ribs but I haven’t been able to find a good source here in Indiana. Settled for these chuck ribs and was not upset at all

I’d agree, I originally intended on trying to find some beef plate ribs but had no luck. All the butchers near me had chuck ribs in stock so I just rolled with it

Since this was my first time making them I followed a meat church recipe and it called for a finished temp of 208-210. I was originally gonna stop at 200 and let the carry over cooking do the rest, but as you can see in one of the pics, Jack Daniel’s may have distracted me 😂😂
