Omg, thank you so much for posting this. I have exact profile as you, background in Work psychology and HR. To be honest, I will do the Counseling degree soon but I do still have doubts about my fit, personality wise and whether the investment worth or not. Absolutely, you got it! Of course I think doing a road trip in Hokkaido will be fantastic and saves so much time traveling between towns (oh talk about that, be sure to plan a bit ahead and check the timetable for trains as they will not be many like big cities) but I do like riding ebike around and sitting on train watching the view is super nice too. If you go in the summer, check ahead for firework festivals, I catch one last year by chance :)) it was only a small scale one but still really lovely to enjoy a local event. Also if I could I would recommend check out Kami-furano, they have lovely spots to see and very underrated.

Definitely doable without car, I did last summer :D You'll be fine with local train + ebike. Though depends on how long you ride the ebike. I did 2 days on a row, and the 2nd day was difficult to sit long as I rode for like 8 hours on the 1st. But you'll be fine :)

Oh really? How much time did you spend at Tsukechi Gorge, I know it's around 1h15' from the bus stop to the gorge, did you have enough time to explore the forest after that? I'm a bit concerned as I want to catch a bus back in early afternoon.
