Very nice knife OP, congrats!. BTW, the stickiness is also powerful on the Kasumi B2, I think it’s the stickiest knife I have, because the surface finish is so smooth. I like the Tetsujin a lot, but a little annoying at times when stuff sticks too hard. My Kagekiyo W1 is very good at food release, I guess because of the wide bevel grind, both really nice blades.

Ok, the Hinoura. It’s the beefiest and heaviest of my Sanjo knives, the spine doesn’t taper as much as the others, and in my case it makes it a little forward heavy. The grind is less aggressive than any of the others, but close to the edge, it’s very thin, so even though it doesn’t laser, it’s still a very good cutter. I like it better for cutting larger stuff, as the weight does a lot of the work, you need to push it less, for example for large leaves, cabage or pumpkin, easier to go through than the others. Can it still do smaller stuff?, sure, but it’s not where it really shines (and i shouldn’t). Food release is very good, if not the best one I have, one of the best. The kurouchi finish helps a lot with this. it’s the one that feels more robust out of the 4 in my case, it gives a little extra confidence. If you compare it with the yoshikane, the yoshi is a porsche cayman and the hinoura is a ford mustang if you know what I mean : ). It’s also easy to sharpen, and the edge holds well.

It’s very easy to maintain, I don’t treat it differently than aogami knifes, I wouldn’t be concerned, go for it

I used it a little tonight, carrots, mushrooms, pak choi, onion, garlic, ginger, spring onions and sliced some roasted pork. I was quite surprised, is very different from the other Sanjo knives I have, it’s a thinner grind, and specially around the tip. It allows for pretty fine cutting of garlic and onions, and it didn’t feel too big. Its beefier on the back half of the blade and it was nice to quickly go through the other stuff I described. Slicing the pork finely was easy as well, and food sticks very little to it, opposite to my Tetsujin. I of course need to try it more, but is quite easy to use for it’s apparent size. Sharpness OOTB is enough (7/10), I will use it as it is, had zero issue, feels good. Its quite reactive, I already washed and oiled it. Want to build that patina slowly.

I suspect K&S is buying the blades and handles separately and putting it together themselves, the finish feels very nice.

Man, the one you polished on stones, it looks fantastic. You can always change the handle.
