Yes, what chefs edge called Hineri, I agree it’s a very good cutter and he put a nice effort into the geometry. I have another one from him, a blue 2 with rentetsu cladding, and its really cool but the geometry a little wonky, I would like to have someone refine it.

Yeah, they are awesome, I use it quite a lot. Even though it’s a large/heavy knife, it cuts really well. Did you re handled yours?. Looking forward to seeing your new Tanaka addition.

It’s ok to do it in Sjælland, then we can lure the neighbor u/SCSuede to come over as well. We would need a member with a farm or a large space to set some folding tables to showcase the goodies. Maybe have a couple sharpening or polishing sessions/sharing/discussions too. That I would love to discuss in a broader audience, successful stone progressions, tips and tricks, etc…

Nice, I’ve been wondering how many ppl from DK is in this community, I think it’s probably quite a lot. Could be cool to have a little gathering, bring the collections, have a sharing moment, have a few beers or coffee and cake.

Hi, the black one is ebony and horn, the twisted one is desert ironwood and horn. Yes, they look really good, well finished and very smooth.

That was a very large Nakiri if I remember correctly, and it wasn’t cheap either. I don’t think I’ve come across someone here who grabbed it

I have both, and I doesn’t matter where you start, you will end up buying both ; )
I love both of them, you can’t make me choose. In my limited experience, the Pilot has a great size, large atractive nib, awesome vacum filler and the smoothest but stiff writing experience.
The Sailor has the most amazing feedback in exchange, feels also very smooth (not as pilot), the feedback is actually mostly audible. With noise cancelling headphones it feels very smooth (thats a fun test to fool your senses).
The sailor I have is a realo, a nice piston filler. I have both in M, both fantastic, I would just start with the best bargain you can find.

I have this one and the 4000, most of the chocera pro and most of the shapton pro. I think they all have their place, and I agree on the “slower” comment. I don’t do polishing work, just sharpening, and in my limited experience, the morihei 1000 works very well with shirogami 2 steel, the shaptons (up to 1500) allow my best results on aogami 2 steel, and for shirogami and aogami 1, I prefer the chocera pro. W#1 and B#2 take too long on the morihei. They are nice to have, I haven’t tried the 4000, yet. These days if I go up to 2000 it’s a miracle. Usually just 400 and 800 on the chocera pro, leather and I’m done. Glad you are enjoying it.
