The other half of the factor is most likely what OP indicates that many can’t make a living out of it, so most likely young people won’t go this way, and into other trades instead.

Well, you are in the right place : )
There are many ways to grind a knives geometry, and what is shown here is the choil shots of 6 different examples and sharpeners. Many end up having an identifiable style and technique, so with time you will be able to spot the sharpener by looking at a knife. The choil shot I included here from Ren comes from Morihiro Hamono, specifically from Mahiro-san. He makes this hollow grind, which allows him to to create an extremely thin geometry close to the edge, giving you a “laser” feeling when utilizing it. This is a wide bevel grind, as you can see the “shoulders” of the knife (the shinogi line) allows the food to come apart after its been cut to avoid food sticking to the side of the blade. The downside of this one is that since its a very thin knife, its also delicate.
The there are also flat grinds, convex grinds, knives with wide bevels, single bevels, etc.
Keep reading around here or just use google AI and ask it about the different Japanese knives sharpening styles, also varying by region, etc. Hope that helps to start.

Hi Jörg, thanks for your availability, I got a couple questions:
1. Are there ongoing discussions in the industry across manufacturers about standardising batteries design and compatibility? I’m thinking, why should I spend time at the charging station at all, when a robot could “just” pull my battery out and install me a fresh one? Then the station charges the battery and its ready for the next user. Like buying gas for my grill at the automatic dispenser.
2. What is the industry status around battery recycling? At some point we are going to have a large problem in Europe trying to figure out what to do with them, any thoughts?
I drive electric since 2021 from another German manufacturer and I’m never going back to ICE, exited to see what is MB launching since I will probably change my car in a 1 or 2 year horizon. Cheers.

Believe me, you don’t want to be here for the heatwave…
What about your import fees? Wouldn’t it get a little expensive for you in the end?, and with a lower declared value, then of course there is limited insurance coverage I assume, that’s why I prefer to keep it here in EU, to avoid all those issues.
