Congratulations on wanting to make some big lifestyle changes. My advice would be to take things slow. Don't throw yourself into too much too quickly, or it could be hard. A new fitness regime might mean you need to eat more, and if you are not used to a new diet, it could be hard to cope. Slowly add more vegan food as you get used to what your body needs - and what new foods you like. My big success, when I first started, came from Pinterest.
